Last night, inspired by the jammies I made them and our advent calendar (more on that soon), we made gingerbread cookies. It made a really small (but yummy) batch so we will have to double or triple the recipe next time.

Gingerbread Cookies

1 and 1/2 cups of flour
1/4 tsp baking soda
pinch of salt
1 tsp ginger (next time I'm going to try adding just a pinch extra)
1 tsp cinnamon (here too)
1/3 cup butter, chopped (I did add about three extra tablespoons of butter)
1/3 cup sugar
2 tbsp male syrup
1 egg yolk, beaten

Sift flour, baking soda, salt and spices into a large bowl. Rub the butter into the flour until the mixture resembles fine bread crumbs. Stir in sugar, syrup and egg yolk and mix to a firm dough. Knead lightly. Wrap and chill for 30 minutes. Preheat oven to 350. Roll dough and cut out gingerbread men. Bake for 10 to 12 minutes. Leave on the baking sheet for 3 minutes before transferring to wire rack.
