And They Ate It
Chunky Broccoli Soup
3 cups of broccoli
1 carrot
1/4 tsp of salt
1/8 tsp of pepper
14 ounces of chicken broth
2 tablespoons of flour
1/4 cup of cold water
1 cup of half and half
Cut up broccoli, peel and shred the carrot (I think the fact that I let them help me with this part made them more excited to eat it). Heat the broccoli, carrot, salt, pepper and chicken broth to boiling over high heat. Once mixture is boiling, reduce heat to low simmer and cover. Cook 6 to 8 minutes or until broccoli is tender. Mix flour and water in a small bowl and whisk until flour is dissolved. Pour into pot, stirring constantly while pouring. Heat to boiling and cook for one minute. Stir in half and half. Cook, stirring until hot. The soup should look steamy but don't let boil.
